A captivating journey through four Japanese cooking styles…

I invite you to embark on a personal culinary journey through the heart of Japan, where each dish I present is a testament to the inspiration drawn from four distinct cooking styles: Edomae, Izakaya, Teppan and Kaiseki.

My seasonal menu is a humble tribute to the rich traditions of Japanese cuisine, where precision and artistry come together to create a dining experience that I hope will leave a lasting impression.

Edo

In the bustling streets of Edo-era Tokyo, a new culinary beat emerged. Chefs, rising to the rhythm of the city’s lively pulse, honed the craft of Edomae sushi.

Pulling fresh catches straight from Tokyo Bay, they mastered the art of marinating and curing to amplify taste. Their hands danced over beds of vinegared rice, crafting each piece with deft precision.

The Edo style wasn’t just about food; it captured the very spirit of the city’s drive and creativity. Today, we celebrate this legacy, a nod to Edo’s unmatched culinary flair.

Izakaya

In the lively alleyways of Japan’s buzzing districts, the charm of Izakaya culture came alive, drawing inspiration from the very soul of street food.

Right there, amidst the city’s hum and chatter, local vendors whipped up magic with straightforward ingredients, turning them into mouth watering dishes that resonated with the city’s quick tempo.

Step into an Izakaya, and you’re in for a treat, with tempura and robatayaki taking centre stage in this section of the menu.

Teppan

In the bustling alleyways of Japan’s dynamic districts, the technique of grilling was reimagined through the lens of Teppan.

This culinary technique, introduced in the 20th century, represents a fusion of traditional tastes with modern flair. The Teppan, a flat steel plate saw local chefs masterfully use the grill to transform simple ingredients into exquisite dishes.

As you enter Teppan, you’ll discover a dish that highlights the skill and finesse of this cooking style.

Kaiseki 

Kaiseki sits at the very heart of Japan’s culinary finesse, a tradition that’s been passed down and refined over the ages.

Starting from the tea rituals in Kyoto, Kaiseki has transformed into more than just a meal. It’s an intricate dance of flavours, textures, and presentation, crafted with utmost care to delight the senses.

With Kaiseki, it’s all about the season and nature’s generous gifts, highlighting the beauty of ingredients and the chef’s skill in every course.
